Mo’s Sweet Tater-Z’chinni Cakes

3 Sweet potato’s cooked and mashed

2 shredded zucchini, raw

3-4 sliced Celery stalks

4 diced green onions

¼ cup Morselicious Mix

1/3 cup Hemp seeds

1/3 cup Water

1 tbsp Rosemary

Black pepper (to taste)

Cayenne (optional)

Directions:

Mix ingredients  together and spoon onto lightly oiled pan

I use coconut oil

Cook until lightly crispy, flip over

Garnish with parsley and cilantro

Top with avocado slices or cashew cream

ENJOY!!

Serves 4

Morselicious MEATLESS MONDAY & a recipe!!!

How was your weekend?

Did you watch the SUPER BOWL?

Well, while you were WATCHING, I was playing

(in my kitchen)

I made a SUPER BOWL!  :)

and here is my recipe:

This is a fantastic LOW sugar/LOW sodium/Vegan/Gluten free

breakfast or snack.  Confession:  I ate it for dinner last night. :)

Mo’s Comfy Porridge

¼ c cooked quinoa

1 scoop veggie protein(unsweetened-low sodium)

2 tbsp flax meal

1/3 – ½ cup boiling water

diced pear or apple

chopped almonds or 2 tbsp almond cream

cinnamon

nutmeg

variationscashew cream, chopped walnuts

any nut of choice

blueberries

Mix the protein powder, water, quinoa, flax meal and spices

Together.

Add the nuts, nut creams and stir.

Finally, mix in the fruit and voila! (another French word I learned & used in Tahiti)

Work it out Wednesday: Homemade Almond Cream & Spicier Cocoa

Happy Work it out Wednesday!
The Morselist is slowly getting back in the kitchen

now that dad is on his road to recovery after his recent

heart attack.  Thank you all again and again for your

incredible support and prayers!!

and since we all LOVE my simple CASHEW CREAM recipe

I decided to experiment with ALMONDS.

Mmmm!!

MORSELICIOUS Heaven and  so simple!
I soaked raw almonds  and water in a jar,

covered and soaked overnight in the refrigerator.

The next morning, I drained the water

and added fresh water (adding a little at a time

for my desired consistency, which was THICK)

and blended well.

Voila!
ALMOND CREAM!!!

I mixed it with hemp protein powder and some

cashew cream with a dash of cinnamon and nutmeg

and spread over  brown rice cakes…a tasty snack.

You can also add to oatmeal, spread over

your MORESLICIOUS pancakes or muffins,

use as a dip…
I’m still experimenting…

 

 

Mo’s Spicier Cocoa

 

The Morselist is turning up the heat in her kitchen

And it’s sooo MORSELICIOUSLY tasty!

My amazing friend, Reece, gave me an

amazing gift box of scintillating spices!!

One of my FAVORITE gifts all year!

(OK, I know it’s still the first month of the year,

but TRULY!

And, I’ve been having a hay day-play day experimenting.

Ingredients for an even SPICIER COCOA

Refer to my previous blog- Work it out Wednesday & the sugar dilemma  
2 tablespoons unsweetened Cacao -Navitas Naturals

1 tablespoon lightly sweetened cocoa – Scharffen Berger

½ cup Unsweetened So Delicious Coconut Milk

add a splash more if you prefer a thinner consistency

dash of black pepper (YES, I wrote black pepper-trust me!)

dash of cayenne pepper -My Spice Sage

dash of cinnamon -My Spice Sage

Pour all of the above ingredients into a small saucepan

and stir over low heat for approximately 5-6 minute

until it becomes a thick-almost pudding like consistency.

I’ve learned that slow cooking really does make

EVERYTHING taste better.  I rarely use my microwave anymore.

It also forces you to SLOW down and SAVOR your food,

something the Morselist is constantly striving.

If you have a frother, and I strongly suggest getting one,

Sprinkle with cacao nibs -Good Cacao

Sit somewhere satisfactory, savor and sip!

Thankful Thursday & Mo’s Less Fruity Green Smootie (yes, smootIE)

In a desire to wean myself from even more sugar,

I’ve been experimenting with using LESS fruit in my smoothies,

NOT saying you have to, but wanted to share.

The results have been pretty tasty.  There is still sugar in carrots.

In fact, 1 medium sized carrot has 3 g sugar.

A small apple has 13 g sugar.

1 cup blueberries has 15 g sugar

1 banana has 28 g sugar

1 cup chopped zucchini has 2 g sugar

1 cup sweet potato has 13 g sugar

1 tsp of sugar = 4 g sugar, fyi.

Granted, the sugar comes from food in its natural state, but

it still adds up and for diabetics, they have to watch ALL sugar.

Just more food for thought.

My LESS FRUITY GREEN SMOOTIE  (because the Morselist LOVES her rhymes)

is quite tasty and passes the MORSELICIOUS test.

4 TBSP Hemp protein powder

1 carrot
1/2 apple
2 TBSP mint
2 TBSP parsley
1-2 TBSP cilantro
1 cup chopped kale
1/2 cup frozen zucchini
2 TBSP flax meal
water (if you want to thinner consistency)
OK..this woman WOWED and inspired me..had to share! You’ll NEVER guess her age!!!  When I grow up, I want to look like her!!

There are many creative marketing

and labeling techniques companies

use to grab our attention, which made

me ask the question:

If a product says NO SUGAR

but lists agave or cane in the ingredients,

is it safe enough for a diabetic or person on a low

sugar diet to eat?

If you’re like me, you crave a taste of

something sweet after dinner or even lunch.

The goal is to reduce the amount of sugar

we ingest, so we strive to wean our taste buds

from overly sweetened-processed foods.

However, most of us eat on-the-go, grabbing

whatever’s convenient and convenience foods

usually over sweeten or sugar AND over salt foods

1)   it’s cheap

2)   it’s a filler/bulking agent, which makes the dish appear bigger (better deal)

3)   it’s tasty and addicting, making us crave and buy more

When my clients ask me if I’d consider adding stevia or other sweeteners

to my morsels or mix, I answer that my goal, my mission

is to provide a convenient grab-n-go treat that is PURE and natural

and guilt free, even for diabetics.

Once we’ve stopped overly consuming excess sugars, sweeteners, artificial sweeteners, fresh-real food tastes AMAZING!

It takes 21 days to form a new habit, so I urge you to try weaning your taste buds.

NOT cold turkey (get it, Thanksgiving?) 

Just wean…

I started years ago by using less sugar in my coffee.

Yes, the Morselist used to add sugar to her coffee AND cereal AND fruit salad.

Do whatever works for you…just aim to use less and less.

You know I love Mo’s Spicy Cocoa:


2 TBSP Unsweetened Cocoa (try Dagoba or Navitas Naturals)

1 TBSP Lightly sweetened Cocoa (Scharffen Berger)

½ c Boiling water

¼ C Unsweetened Coconut Milk (So Delicious) or (Living Harvest) Hemp Milk

(OR WHATEVER Milk you choose…just read the sugar content on the label)

1 tsp Cinnamon

½ tsp Nutmeg

½ tsp Cayenne

and feel free to add your favorite spices: cloves, allspice, cardoman…
