RedEnvelope.com invited yours truly, to join them in creating a MORSELICOUS Menu for their Holiday dinner. I graciously accepted and created my Squashta Seed Soiree-Morselicious style menu.
For me? Why, thank you!
The star ingredient for the night? Squash! All types of squash and to stay true to my MORSELICIOUS mission; my menu is low sugar, low sodium, gluten-free and vegan and remember November is Diabetes Awareness Month. We are aware of diabetes here at Mac-n-Mo’s every day.
I was inspired by a few of Red Envelope’s Anniversary gift items and a few mo’ I’d LOVE to have at my table and I think you’ll enjoy. I’ve always been a huge fan of these kitchen chalk boards. How fun to display your menu at home? So chic!
As with most of my meals, there is a LOT of chopping and how fantastic is this personalized wood cutting board? Great for serving appetizers, too, in a rustic Morselicious style. It’s so much FUN to “window” shop!
First, I serve the appetizers: A rainbow of sliced veggies and pumpkin cashew “cheeZe” dip.
Ingredients
- 1 15 oz can organic pumpkin puree
- 1/2 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp vanilla
- 1/4 cup nutritional yeast
Directions:

For Pumpkin Dip:
Mix the pumpkin mixture and the cashew cream into a Pumpkin Cashew “Cheeze.”
Store in refrigerator until ready to serve.
Now that we’ve eaten a rainbow of veggies and tasty dip, let’s move onto the main course: My Roasted Acorn Squasherole
These 12 boxes of seeds serve as festive, fun place settings AND take home gifts. 12 boxes come in a package. Your guests will think of you and thank you ALL year! As an experiment, you could try a Jack-in-the-beanstalk trick and plant a few of your squasherole seeds and see what grows? I’m just saying… 🙂
My Squasherole will look so festive in this country chic dish, also Red Envelope’s.
accompanied by their adorable personalized red holiday napkins, changing the”H” to “M”, of course. Are you drooling yet?
Who’s got room for dessert? Remember, it’s low sugar, low sodium, gluten-free, vegan, soy-free, come on..just a taste. Mo’s MORSELICIOUS PUMPKIN ICE-“CREAM”
Ingredients
- 1 can pure pumpkin
- ¼ cup canned coconut milk
- ¼ cup almond butter
- 1.5 tsp pumpkin pie spice
- or mix cinnamon and nutmeg
- ½ tsp – 1 tsp liquid stevia (depending on desired sweetnesss)
- ice cubes
Blend in high speed blender or food processor into a smooth consistency
Drink immediately as a shake or store in freezer for 45 minutes and eat as SOFT SERVE ice “cream.” Serve with chocolate chip-pumpkin morsels for extra MORSELICIOUSness!
