I made this MORSELICIOUS meatless recipe for Doug and I and Doug kept shaking his head as he took more bites, “Mo, these taste like mashed potatoes!”
He couldn’t conceive they were mashed cauliflower…LOW CARB, filled with nutrition and soooo easy!
Cauliflower contains Thiamin, Riboflavin, Phosphorus and Potassium, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Vitamin B6, Folate, Pantothenic Acid and Manganese.
Please try and share your ideas, variations and I LOOOVE pix!
3 cups steamed cauliflower with some of the steamed water
1 tbsp oil (olive, coconut, hemp)
1/3 cup chopped parsley
1 tbsp fresh basil or oregano
juice of 1 lemon
1 tsp no salt seasoning
pepper and garlic powder to taste
throw everything into a high speed blender
and blend ’til creamy mash
Serve and garnish with parsley sprigs and or red pepper flakes
Voila! A MORSELICIOUS low carb, no sodium, no sugar, gluten free, vegan dish!

sounds awesome. i’ll have to try it on my hubby who hates cauliflower and brocc. but maybe this will hide it enuf!!! anyway, it’s not at our farmer’s markets yet but will be on the lookout!!!

Great recipe that will become a standard in our house! I added some chopped green onion, a clove of fresh garlic and went easy on the lemon juice because Jason doesn’t like things too lemony. He had no idea it was cauliflower! It came out so silky in my Vitamix. Thanks Mo for another great recipe,

white kidney beans. they’re Italian. Great to make hummus with instead of garbonzos. They’re creamier.

This looks so good! I bet you could even use vegetable stock in place of the water for a little different taste if you wanted to. Since cauliflower is one of those foods that loves to soak up flavor, using this recipe as a base, there could be so many variations! I bet you could add some kind of beans (canelloni?) to the mix as well for a bit more protein or some indian or mediterranian spices. Okay – I have to go home and make this now. Mo has inspired me!!
I bet this would be a great dip as well!
