OK…onto Monday’s post: a MORSELICIOUS MINTY recipe, just in time for summer!
Mo’s icy minty cacao
Is the heat making you sweat?
Craving a refreshing treat without the guilt?
¾ cup unsweetened almond milk,
½ – 1 tsp peppermint flavor
1 tsp vanilla
and 1 TBSP unsweetened cacao nibs* (OR dark chocolate chips)
a pinch/drop of pure stevia
**and for a lil’ EXTRA creaminess, add
2 tablespoons coconut milk/cream (the kind in a can)
Blend well in high speed blender until a shake like consistency…
Garnish with a sprig o’ fresh mint and ENJOY!
*I doubt you’ll need the stevia if you use the dark chocolate chips, so taste first.
Yummmm! Mint chocolate – my favorite flavor! Thanks for the recipe, Mo. As for outdoor activities; for those of us restricted to gentle movements, a walk around Lake Balboa is a beautiful way to get moving. Bring your camera. There are lots of photo ops!
