Let me break it down for you…and my PUMPKIN COCONUT “Cakes” Recipe

How do you break your routine? Or, do you?

Break bigger goals into smaller, attainable ones?

Do you ever consider trying this to alleviate some of those overwhelming-nagging voices, constant white noise clamoring telling you it’s just too much and too difficult?

Five hundred, twenty-five thousand, six hundred minutes.

Five hundred twenty five thousand  moments so dear?

Five hundred, twenty five thousand, six hundreds minutes.

How do you measure?

Measure a year?

4 MORSEL points if you name that tune! (Hint, yes, of course, it’s a show tune and the title is the alternative to “buy”)

Let me break it down:

There are 86,400 seconds in a day, 24 hours.

3,600 seconds in one hour.

60 seconds in one minute

If you really break it down and think about time in smaller pieces, so many things seem possible.

Consider one big goal you have made for yourself this year or even more recently this Fall.

Write it down.

Now, write down the amount of time you have to achieve this goal.

One year

365 days

12 months

52 weeks

500, 25, 600 minutes

Have you broken down an action plan by quarters?

I’ll bet you are now…or at least thinking about it.

I started thinking about this while I was creating and testing a MORSELICIOUS recipe and set the timer for 12 minutes or 720 seconds.  Amazing how those 12 minutes FLY by as I tried to beat the clock while cleaning up my mess in the kitchen as my creation baked and equally amazing how much can be accomplished in 12 minutes or if I break it down: 720 seconds.

I’ve noticed that when I count the seconds I am able to sustain the plank position, the stop watch goes much slower than my own clock; yet when I’m counting the seconds or minutes for my snooze button “cushion” the clock seems to fast forward at bullet train pace.  What’s up with that?

The reality is we all have 24 hours in a day and some of us seem to accomplish the supernatural-extraordinary while others are able to relish each of the 86,400 seconds by focusing on each task with finely tuned precision.  Which category do you lean towards more?  How do you break things down?
Here’s a way to break down 20 minutes  or 1200 seconds to enjoy my MORSELICIOUS Pumpkin-Coconut “cakes”

MORSELICIOUS Pumpkin Coconut ”cakes”

Serves 3 to 4

Ingredients

1 15-oz.canned pumpkin

½ cup chopped green onions

¼ cup flax meal mixed with ¾ cup water

3 tablespoon Mac-n-Mo’s MORSELICIOUS Mix

1 tablespoon fresh lemon juice

2 teaspoon cinnamon

1 teaspoon nutmeg (optional)

Coconut oil, for frying

For topping: Unsweetened applesauce, cashew cream or nut butter of choice

Directions

1. Combine pumpkin and onions in a large bowl, and thoroughly combine with flax meal paste, baking mix, lemon juice, cinnamon and nutmeg. Set aside.

2. In a large skillet set over high heat, warm enough coconut oil to cover the bottom of the pan. Using a large spoon, add batter and flatten/shape into small cakes. (Note: Do not overcrowd the pan; pancakes may need to be made in batches.)

3. Immediately decrease heat to medium and cook pancakes until golden brown, about 3 to 4 minutes on each side. Be sure to flip when it is halfway cooked through or pancakes will break apart. Repeat with the remaining batter.

4. Serve pancakes topped with applesauce, nut butter or cashew cream, if desired.

Tip: If batter is too watery, add a bit more baking mix; if it’s too thick, add a bit more flax meal/water or unsweetened nut milk.

  1. Oh, and I’ve definitely noticed that taking a look at the longer chunks of time, and then breaking goals down into smaller chunks of time, and smaller “morsels”, definitely helps me reach my goals! 🙂

    The recipe looks intriguing… I’m a little surprised by the green onions! Perhaps they really make it work, though. I’ll give it a try. Thanks!

    1. YES!!! Jill, you win 4 morsel points! The song is from RENT and it’s called, SEASONS OF LOVE.
      The pumpkin coconut cakes are a savory recipe, so if you’d prefer a sweeter one, simply leave out the green onions. Please let me know how you like and better, send a photo! 🙂
