CONGRATULATIONS to our MORSELICIOUS SWEET LEAF STEVIA recipe winners, Lindsay and Reece!

How was your weekend? What did you do? I started the weekend with a magnificent hike with my friend, Nicola. The misty ocean fog was still making its way through the mountains and if I let my imagination wander, I could have sworn we were trekking through the grassy knolls of Ireland.  No, this isn’t a pix of our hike, just wanted to show you what my imagination looks like… :)

Then, a few of my cohorts from IIN and I got together for a study session/potluck/share fest. Michelle made a delicious quinoa salad. Edie made mixed greens & wild rice tempeh with a delectable vinaigrette. Suzi sprouted a buckwheat caramelized onion raw pizza.  OMG-YUM! I, of course made MORSELS! I’m blessed to be in school with such fascinating women. Doug and I attended my ‘lil’ sis, Meni’s orchestral concert.

She plays viola and was incredible! Sunday, we took the Metro downtown, an adventure in Los Angeles and a great mini-stair work-out!

We saw the Tony Award winning performance of Stephen Sondheim’s, FOLLIES at the Ahmanson Theatre.

This show is LEGENDARY and inspiring!  My good friend, Jenifer is in the show and she just found out she’s performing at the Tony Awards! Soo excited for her!

Lindsay’s Chocolate Peanut Butter MORSELICIOUS Brownies

1 Bag Morselicious Mix

1/2 cup unsweetened cocoa
1 tsp. cinnamon
1 cup mashed yam (cooked)
2 cups unsweetened almond milk
1/2 cup peanut butter
1 tsp. vanilla
5-10 drops Sweet Leaf Stevia
1.  Preheat the oven to 350.
2.  Put all the dry ingredients into a bowl.  If the cocoa is lumpy sift it.
3.  Combine the wet ingredients with an electric mixer.
4.  Add the dry ingredients
5.  Oil an 8×8 inch pan (I used coconut oil).
6.  Pour in the morseliciousness.
7.  Bake at 350 for 20-30 minutes depending on how gooey you like it.

Reece’s Fruit Delightfully Nutty Morsels (NOT cookies)Ingredients:
3/4 cup Morselicious Mix
1/4 cup dried apricots (or your favorite dried fruit), chopped
1 medium, ripe banana, mashed
1 1/2 tbsp coconut milk
3 teaspoons Sweet Leaf Stevia
1 tablespoon unsweetened preserves (I used Apricot that I happened to already have)
Pinch salt (Optional)
1/3 cup walnuts, choppedInstructions:
Pre-heat oven to 375 degrees. Mash together all ingredients thoroughly. If it seems a bit dry, feel free to add a bit more coconut milk. Drop by the spoonful onto a parchment or silpat-lined baking sheet. Bake for 10-12 minutes or until lightly golden. Experiment with different dried fruits!

Morselicious Meni Monday: lessons from my other sisters

Happy MORSELICIOUS MEATLESS MONDAY!
Or, as in my Blog Title Morselicious Meni Monday!
Meni, as some of you may remember is my “Little” sister from Big Brothers Big Sisters

and we have been together since she was 7.  Incredible how time flies-life lessons learned!

Meni just turned 15 and we celebrated over the weekend. She has grown into an amazing young woman. Amazing, for the record is one of her all time FAVORITE words! :)

When we first met, she LOVED to hula hoop and could hoop me around the hula!
She was a CHAMPION at her school.  I needed mo’ practice!

She’s not so much into hula hooping these days, but she smiles at the mention.

What wonderful gifts Meni has brought me. Over lunch, she shared her LIST of goals for  summer:  go to the beach, go to Hurricane Harbor at Six Flaggs Magic Mountain, learn to swim and finish the 10 books on her reading list, which she compiled in January.

There were 40 books on her list and she’s down to the last 10.

I just gave her 2 more and the rate she reads, she’ll be down to 8  by next week.
I recently read that school kids should read 5 books over the summer in order to keep their brains active and in shape. No worries for Meni. I love that she sets goals for herself, if you count going on a water ride at an amusement park a goal. I know I did at that age.  Heck, I made a goal in junior high to acquire enough signatures on a petition to move General Hospital back to 3pm so I could watch it AFTER school. This was BEFORE VCR’s, well, before WE had a VCR.  And guess what?   Goal accomplished! :)

There was NO way I would miss Luke and Laura’s wedding. Mom did not understand my rationale that missing school to witness the event of a lifetime was paramount to my middle school years. So, I’m all for goal setting!

In addition to spending quality time with Meni, I attended one of my best friend’s, (another younger “sister”) graduate school ceremony at Cal State Northridge. So much academia for the Morselist.  

It was an inspiring group. 4 schools focusing on Special Education Teaching. Talk about dedication and passion.  The energy was palpable and infectious. I’m extremely proud of my friend, Lindsay, who is one of the best teachers I know. Talk about achieving goals!  Lindsay was the #1 instrumental/catalyst in me creating Mac-n-Mo’s as a business, so whenever I get overwhelmed or stressed out. Did I just admit Mo, the Morselist gets STRESSED?!  :) I blame her, and I do it with respect and love!

Doug’s mom celebrated her 90th birthday and she’s perkier and sharper than most 40 year olds I know. A true testament to staying active and living life!  All in all, a beautiful MORSELICIOUS weekend!

MORSELICIOUS MONDAY: Lessons learned from little’s and a lil’ Sound of Music…

This is my “Little” sis from Big Brothers Big Sisters.

We have been together for over 7 years and she is now 14 going on 15!

(Which is different from 16 going on 17 like the song in

AMAZING and what a gift she has been in my life.

We had a date this past weekend and I took her

to a Middle Eastern Vegetarian Feast.

She LOVED everything we tasted and we both decided on

falafels, hummus, baba ganoush, mixed greens with tahini dressing...

Mmmmm…

After her first couple of bites, Meni

grinned, “this is so tasty and unique…a real adventure in food..kind of like us.”

As she threw her arms up in an animated way to make her

point, I noticed a beautiful new silver ring on her finger and I asked

to see it. It was inscribed:

“LOVE THE LIFE YOU LIVE.”

I told her I LOVED the ring and its message.

She removed the ring to show me it was inscribed with the same

message inside the ring, too.

Double the power, we agreed. :)

I asked her what the message meant to her.

She replied, “I’m content with everything in my life right now.”
I asked her if there was ONE thing she could have different, what would it be?

She said, “Nothing. I’m really really happy.”

This coming from a 14 1/2 year old!

Can we all say this honestly?

Talk about lessons we could ALL learn from our

“Little’s,” no matter what the age.
