OK!! Besides being thankful for all the blessings I have in my life, I tried Mo’s wee little veggies pies from her cookbook and I have to say I am impressed. I did a couple different things which you might want to try also. Instead of cashew cream I soaked almonds and added two cloves of garlic, a squeeze of lemon, and a couple of sprigs of rosemary. I put all of it in a blender and then added it to Mo’s vegetable mixture. I took a large pie pan and put crust on the bottom put the mixture in and then added another layer of crust. Melissa’s not so wee little veggie pie! Go big or go home! 🙂 I think by baking the cream with the vegetables it gives the pie a creamy texture inside. YUM! 🙂 By the way I didn’t soak the almonds overnight, too impatient for that! I put them in luke warm water for about ten minutes and then took off the skins and soaked them for another ten minutes. They were ready to go! Also, I have to admit I didn’t have Mo’s Morsel Mix, I used her pie crust recipe plus a gluten free pie crust mix. I cooked the pie for about an hour and the crust came out chewy and hard. :(:( BUT I then cooked it for another twenty minutes and it softened and was better but not the same as Mo’s mix, so be sure to stock up!!!!!
