Morselicious Monday Pumpkin Soup & Mini Banana Nut Muffins

It’s hot here in So Cal again!
Where did our 3 days of Fall Weather go?

and baked & tested many MORSELICIOUS recipes!!

Here are 3 recipes for you on this MORSELICIOUS MEATLESS MONDAY! 

I’m thrilled at how many of you are actually making my recipes

MORSELICIOUS PUMPKIN or BUTTERNUT SQUASH SOUP

Directions
  1. Heat the oil in a large saucepan over low heat. Add the onion and garlic and saute.
  2. Add to CROCK POT.
  3. Add the ginger, curry powder, cumin, salt, and cinnamon. Stir for 1 minute.
  4. Add the water, pumpkin* or squash and cover, cook for 2.5 -3 hours on LOW.
  5. In a food processor or blender, puree the soup.
  6. Top with Parsley/Basil, Hemp &/or Pumpkin Seeds and a dollop of Cashew Cream.

*  Option, cut pumpkin or squash in half and slow cook in oven
for at least 30 minutes before starting the CROCK POT Process.
I didn’t..I  just added to Crock Pot with everything else.

ALSO,  I toasted the Pumpkin Seeds in the oven for about 12 minutes

I served with Tahini Coleslaw

1.5 TBSP Tahini

1 TBSP Apple Cider Vinegar or fresh Lemon Juice

Black Pepper

Ginger

Cayenne

Stir well and pour over shredded cabbage, sprinkle with Sesame Seeds

and for dessert

MORSELICIOUS Mini Banana Nut Muffins

INGREDIENTS
1 C Morselicious Mix

1 mashed banana

1.5 tsp Vanilla

1/4 C Chopped Walnuts

Mix well

Add to Mini Muffin Tins

Bake 350 for 15 minutes..

Serve with a glass of SO DELICIOUS COCONUT MILK or ALMOND MILK

Mmmmmm

 

*Cashew Cream Directions:

2 cups of Raw Cashews
1 cup of water
cover cashews in water in bowl
Soak in refrgerator overnight
Drain some of the water in the morning
and blend well into a thick cream
(I store mine in a jar and use as a butter,
cheese, spread, whatever…)

  4. Ooh, my mouth started watering just reading the title!! I bought a pumpkin today so I could use the seeds for a preschool activity so I’m thinking I’ve got the perfect end use for the rest of the pumpkin! BTW, are your Morselicious mix available up here?
