Sometimes I just get a hankering for the really sweet stuff – banana pudding, homemade ice cream. When those times hit, it is best to just hit the craving dead-on instead of denying myself. So I like to make a peanut butter soft serve/smoothie. I slice & freeze 3-4 bananas depending on who’s going to be sharing. When they are completely frozen, I put them in my heavy-duty, super-duper food processor with 2 tablespoons of peanut butter. Peanut Butter & Co.’s Smooth Operator works great. If I’m in the mood for a “soft serve” I eat immediately. If I’m in the mood for ice cream, I put the mixture back in the freezer. Just a couple of bites & I’m back on track.
