Please help spread awareness and show your support by sharing information and asking questions. Celiac is an autoimmune disorder, not a diet fad or choice, as many uninformed people think, in part to the “Gluten-free Craze.” A person with Celiac can NOT, under any circumstances consume gluten, even a spec, including a salad that had the croutons removed.
What is gluten? Wheat, rye, barley, spelt and oats, yes, oats because of cross-contamination. Many people with Celiac can not even tolerate gluten-free oats.
ZERO cross-contamination is paramount for someone with Celiac to remain safe and healthy. Many of my clients expressed anxiety when they are invited to breakfast, lunch or dinner, ANYWHERE, unless they are eating with a fellow Celiac. Please show support by learning the facts, which will inform and increase your awareness and understanding/compassion for your loved ones. It can be a lonely and exhausting journey.
