Now, for your Tasty Tuesday recipe:
I made a White Bean/Fennel Salad that is
ooooh, so MORSELICIOUS!
Of course you may use whatever beans you’d like,
but you may recall the mega sized bags o’ beans
my sister gifted me & the amazing recipes I’ve shared,
I am still creating Morselicious recipes using those:
Mo, the Morselist presents: Fenneled Bean Salad
1 cup white beans (soaked overnight)
1 tablespoon horseradish
(if you want to make your own horseradish sans salt-
- 8-10-inch long piece of horseradish root
- 2 Tbsp water
- 1 Tbsp white vinegar)
3 green onions diced
1 cup fennel (diced)
1/4 cup chopped parsley
1 tablespoon vinegar (I used apple cider vinegar)
1 tablespoon oil (I used coconut oil)
Black & red pepper to taste
Combine all ingredients together. Mix well and serve.
Refrigerate.
May also top with Sesame or Hemp Seeds.
I grow fennel..primarily for the butterflies as it’s got too much of a licorice taste for me, but my sister likes it. I’ll share the recipe with her!
