LOVE these “Turban” Pumpkins!
For din din, I discovered & created Raw Sea Kelp Noodles and made a Fettucini with Cilantro & Kale!
OMG!!
First, the Sea Kelp Noodles:
I found them at a number of Natural Foods Stores…
approximately $3/bag and each bag
serves 3, but I eat half the bag…
A great alternative to pasta:
GLUTEN FREE
only 6 carbs per serving,
18 carbs per bag!
It has a neutral flavor, so whatever you add to it, will create your dish.
I made a Cashew Cream Fettucini with:
Lightly steamed kale
Cilantro & Basil
Cherry Tomatoes
Mixed into my cashew cream:
1/2 – 1 clove diced garlic or garlic powder
Black Pepper
Lemon Juice (of one whole lemon)
Cayenne Pepper
Balsamic Vinegar OR Apple Cider Vingerar (I used both)
Rinse Sea Kelp Noodles and place into large bowl.
Add Cashew Cream Sauce & mix well.
Add Veggies.
If I had broccoli or peas, I would have added to this.

Congrats on the e-cookbook and radio show! Saturday afternoon I volunteered for NW Hope & Healing, a local breast cancer charity, at Brighton’s Collectibles to talk about the health benefits of yoga. Saturday night I helped cheer on the Seattle Sounders soccer team..YEH!!!

Last weekend, saw I Love Lucy Live – highly recommend it. This past weekend, had an informational meeting on taking a trip to Kenya to visit with the orphaned children of Machao and help them become sustainable. I call it my Make a Wish Foundation weekend. Both times it was most perfect.
