Morselicious Monday & Veggie-choke casserole

Happy MORSELICIOUS MEATLESS MONDAY!
I’ve created a VEGGIE-CHOKE CASSEROLE for you to try

tonight or ANY night or ANY morning,

as it is a tasty brunch dish, too!

ENJOY! 🙂

INGREDIENTS

Serves: 6-8

2 cans (14 ounces each) artichoke hearts, drained

¾ C Morselicious Mix

1 cup hemp protein powder

mixed veggies: carrots, zucchini, mushrooms

2 tablespoons extra-virgin olive oil

1/4 cup grated Vegan cheese

juice of lemon

1 teaspoon minced garlic

¼ teaspoon red pepper, or to taste

DIRECTIONS

Preheat the oven to 325°F. Coat an 11″ x 7″ baking dish with cooking spray.

Combine the artichokes, the reserved artichoke juice, 1/2 cup of the Morselicious Mix,

hemp protein powder, veggies 1 tablespoon of the oil, cheese, lemon juice, garlic,

and red-pepper in the prepared baking dish.

Sprinkle with the remaining 1/4 cup Morselicious Mix and

drizzle with the remaining 1 tablespoon oil.

Bake for 10 minutes, or until hot and bubbly.
