have I got a tasty-fitting recipe for you! It can be eaten as a dip, spread,
with a spoon (if no one’s looking, or heck, even if they are..just DON’T double dip!)
Eggplants are an excellent source of potassium & folic acid and helps block free radicals and they are so versatile and tasty! MORSELICIOUSNESS at its best!
Mo’s eggplant spreadilicious dip:
Morselicious Eggplant Dip/Spread
8 Servings
Ingredients: 1 eggplant (1 1/2-pounds)
4 green onions, chopped
2 tablespoons capers
juice of 1 lemon (make sure to catch those seeds)
1/4 cup extra-virgin olive oil
1 tablespoon tahini
3/4 teaspoon freshly ground black pepper
1 tablespoon apple cider vinegar
2 tablespoon chopped fresh parsley
1 clove garlic, diced (optional)
1. Preheat oven to 325°F.
2. Set the eggplant on a baking pan or dish and pierce it a few times with a fork or knife. Bake it until it becomes soft, about 30 minutes; it should pierce easily with a fork. Remove it from the oven and let cool.
(make sure you’re wearing your oven mitts) J
3. When completely cooled, cut up into chunks and into a blender or food processor. Add the onions, capers, and lemon juice. Turn on the machine, then gradually add the olive oil and parsley. Continue to blend until the eggplant is smooth and creamy.
4. Transfer to a bowl and stir in the pepper and vinegar.
5. Garnish with parsley and sprinkle with sesame seeds.
6. Serve with colorful raw veggies or spread on a sandwich or top your salad!

best way to defeat diabetes is to get kids eating less grains and sugar and more fresh fruits and veggies. get kids into smoothies early – it’s amazing what you can hide in those things. eat more nuts – and of course mo’s morsels instead of sugary snacks. get sugar cereals off of supermarket shelves – don’t get me started…..my daughter ended up with low fat chocolate milk on fruit loops for lunch at school yesterday when the salad she ordered did not come in – how much do we love public schools???? not much this week!!!! UGH. and then when she wasn’t filled, they gave her macaroni salad – lots of veggies there, right???? NOT!!!!

My sister Jennie played a great joke on me. She called to tell me my friend Leslie had written her on Facebook that she had heard the entire family was coming over to Switzerland for my nephew’s First Communion, and she wanted to come to be part of it since she knew I could not. Then Jennie told me even my other sister’s boyfriend’s parents were going to be there too. I was starting to feel really badly that I could not make it, and wondering how I had not heard about my other friend’s plans to go to Europe…I was a bit confused because Leslie does not really use Facebook often….and she is supposed to go to Europe with me someday…when Jennie announced that all of this had come to fruition that day, on April Fool’s Day. I still did not get it, so she repeated herself and laughed…hahaha! Gotchya!

please let me know if you try and regarding the capers, you can rinse off if you’d like less salt. Capers are SALTY, but once in a while, the Morselist will include ingredients, such as capers, as a TREAT! 🙂
