Happy Morselicious Meatless Monday!!

How was your weekend? Wanna hear irony?
The weather in So. Cal finally cooled down and Mo, the Morselist got BURNED!

Yes, again! This one is the biggest burn I’ve ever had! I don’t want to discuss…it HURTS!

Moving on…

I created another tasty Meatless-Morsel SLOWicious Meal in my Crock Pot or SLOW COOKER, thus the name…and well, here it is… and please BE CAREFUL of BURNING OVENS!!!!

My sister is trying to find me protective arm gear made from oven mitts, NO JOKE…so if you have any leads, please contact us!

You can throw ALL of the ingredients into your Slow Cooker-Crock Pot and cook on low for 4 – 4.5 hours. Perfect for busy people and NO, this is NOT how I burned myself! 🙂

INGREDIENTS

1/2 C Quinoa (Rinse first)
3/4 C Lentils (Rinse first)
Mushroooms
2 Small Zucchini
1 Cup Diced Carrots
1 Medium Sweet Potato
1/4 C Chopped Parsley
Fresh Basil
2 -4 Sprigs Rosemary
1 Stick Cinnamon
1/2 tsp Tumeric
1 -2 tsp Pepper
1/2 Diced Jalapeno Pepper
1/2 – 1 tsp Cayenne
1 tsp Curry
1/2 tsp Ginger
1/2 Fresh Lemon
1/2 tsp Lemon Rind
1/4 tsp Dry Mustard
1 Tbsp Coconut Oil
1 clove diced Garlic
2 Chopped Green Onions
1/4 C Coconut Milk
4 C Water

1Tbsp Chia Seeds

2 Tbsp Hemp Protein
Cook on Low 4 – 4.5 hours
Add any other greens you may want and just before serving, top with
TOASTED HEMP SEEDS or Pumpkin Seeds

  1. YUM–this looks good! I’m going to have to tie one on (an apron with clothes on too) and give it a try. So sorry about your burn–can’t imagine your fair skin under CA skies…cloudy or clear. Take care!

  2. Sounds (and looks) delish! I love slow-cooking – especially since it gives you time to do other things and by the time meal is done cooking, the flavors have come together marvelously!!

  3. Ouch! So sorry about your burn, Mo! I hope it doesn’t hurt to badly and that it will heal quickly. Here’s a short story that I hope will bring a smile: A dear friend of mine likes to bake in the nude, (she doesn’t even wear an apron!) She burned her breast on an oven rack when making muffins last week. (She still bakes in the nude.)

    This dish sounds SO delicious! It has so many wonderful ingredients in it—quinoa, lentils, sweet potato, rosemary, cinnamon, curry, and So Delicious Coconut Milk, and so many more! I cannot wait to try this!
