Today we meet The Compassionate Nutritionist, Christine Thompson, who shares her beautiful knowledge, philosophies and a delicious recipe!!!

Q. How did you become a Health Coach?

A. After working as a clinical dietitian for many, many years, I became interested in becoming a Wellness Coach because I truly resonated with the coaching methodology.  Coaching a client vs. counseling a client is so very different  and brings about much better results.

So I enrolled and completed the WellCoaches program.

Q. What unique gifts do you offer your clients or why do people come to you instead of a traditional nutritionist?

A. I named my business Compassionate Nutritionist  because that is the true essence of who I am,  and that is what I bring to the table with each and every client that I serve.  Because I have been down the same road  that the majority of my clients are on right at the moment, I can totally empathize and have complete compassion for each and every challenge  that they encounter on their unique journey toward health and wellness.

What I hear over and over again is that my clients can appreciate the fact  that I am realistic, down-to-earth, and personable.  My clients can relate to me because, although I am not overweight,  I am not unrealistically thin either.  I believe that I role model for them that it’s okay to have curves and be healthy at the same time.

Q. What are some of the most common issues your clients bring to you?

One of the most common struggles my clients face is TIME MANAGEMENT.

I hear often “I don’t have time to prepare meals at home” or “I really don’t have time to exercise because of my busy schedule.”

I believe that you can make time for whatever is a priority in your life.  If being healthy is a priority, then you’ll have time for it.  I help guide my clients into making their life a priority.

Q. What’s a typical session like?

My private mentor clients get 1:1 weekly coaching sessions with me  where we map out an overall life vision and set weekly goals to get there.

The process, which is a part of my Compassionate Transformation Program©,  is quite powerful and very effective for long-term success.

 

Would you like to offer my Morselist Readers a recipe?

For the Eggplant Bacon:

Several Japanese eggplants, thinly sliced lengthwise

1/4 cup cold-pressed olive oil

2 tablespoons umeboshi plum vinegar or apple cider vinegar

1 tablespoon raw honey

1 teaspoon freshly cracked pepper

Mix together the dressing ingredients and marinate the sliced eggplant for at least one hour, making sure it is coated well.

Place the marinated eggplant on lined dehydrator trays and reduce for 12 hours at 105 degrees.

Turn the strips over and onto unlined mesh dehydrator trays to finish drying for another 8 – 12 hours.

*If you don’t have a dehydrator, no worries! Just set your oven on the lowest temp possible and crack the oven door open.  Voila! Instant dehydrator!

For the Thousand Island Dressing:

2 small oranges, peeled and seeded

1 small red bell pepper, seeded and sliced

1/4 cup cold-pressed olive oil

2 tablespoons raw honey

1 tablespoon Nama Shoyu or Coconut Aminos

1/4 cup cashew or almond butter

1 tablespoon apple cider vinegar or lemon juice

4 cloves garlic

Put all ingredients into a blender to process.

Store in an airtight jar in the refrigerator until ready to use.

For the Sandwich:

Essene Bread (Ezekiel or Manna) sliced

leaf lettuce

sliced ripe tomatoes

Eggplant Bacon

Dressing

Build this sandwich to suit your own individual tastes. If you are 100% raw or gluten intolerant, use a gluten-free, dehydrated bread/cracker instead of Ezekiel.

Q. Any simple tips we can implement in our daily lives?

A. One of the simplest, yet powerful, tip that I would like to offer your readers is this:  Be kind to yourself.

When you’re on the journey toward becoming a healthier you, it is just that: A Journey.

The journey isn’t about perfection, it’s about progress. So if you miss a day of exercise, it’s okay because the next day to do better is just around the corner.

If you eat something that “wasn’t on the plan”,  just know that you’re still “on the plan”.

When you release the shame and guilt that surrounds your challenges with food,  when you TRULY release it,  your journey automatically becomes so much easier and you reach your goals much faster.

 Christine Thomson is a Registered Dietitian/Life Coach  who’s mission is to guide each person to their body’s full wellness potential through a highly-intuitive and unique balance of physical & spiritual health.  It is her belief that good food alone cannot create true and complete health,  and the greatest reward is seeing the moment when it all clicks for a client— when that person realizes healthy living is a pleasure to be fulfilled in THIS lifetime, and not a challenge.
