How did you spend your weekend?
I did a couple demos for Mac-n-Mo’s
and spent time in my TEST KITCHEN.
My sitster, whom I affectionately call Nerd
and she affectionately returns the compliment,
sent a BIG BAG O’ BEANS, which she got at her
Farmer’s Market, with my parents on their recent trip to
L.A. They are Peruano Beans from Peru, and
Machu Picchu, Peru, is on our BUCKET LIST, but I digress.
She asked me, well, more like challenged me, as any “lil” sis would,
“You’re the Morselist – make something MORSELICIOUS with these!”
So, I DID!!! May I present a Morselicious Meatless Monday recipe:
Nerdie’s Yellow Bean Patties
2 Cups Beans, soaked and rinsed (I used Peruano)
4 chopped green onions
1/4 C Morselicious Mix
1.5 tablespoons rosemary
2 tablespoons cilantro OR Italian Parsley
1/2 teaspoon ground cumin
2 tablespoons extra-virgin olive oil or hemp oil
Juice of 1 lemon AND 1 lime
1 tablespoon apple cider vinegar
Black & red pepper to taste
Tahini Sauce
2 tablespoons Tahini, (ground up sesame seeds)
Juice of 1/2 lemon and 1/2 lime
1/3 cup chopped flat-leaf parsley
Black & red pepper to taste
PREP
Place cooked beans, scallions, Morselicious Mix, rosemary and cumin in a food processor or blender. Make sure to scrape the sides, until a thick moist mixture forms. Form into 8 mini patties.
Heat oil in a cast iron skillet over medium-high heat. Add patties and cook until golden almost to a crisp, 3-4 minutes. Carefully flip and cook until golden brown, 2 to 3 more minutes.
For sauce: Mix tahini, lemon juice, lime juice, parsley and peppers in a small bowl.
Drizzle sauce over patties and serve with mixed greens.
