Please share…I LOOOVE hearing from you. I’ve received some fabulous ideas for our DEFEAT DIABETES contest. Please keep your ideas coming! We have 2 more weeks before choosing a winner! As promised, here is the ALMOND PEAR TART recipe I created for Doug’s birthday last week
and if I may toot …it’s Mmmorselicious!
Doug’s MORSELICIOUS Almond Pear Tart
1 ¼ cups Morselicious Mix
1/3 cup unsweetened applesauce*
1 tbsp coconut oil
1 tsp vanilla
½ tsp almond extract
In mixing bowl, combine all ingredients and mix by hand.
Form into a ball and dust with extra Morselicious Mix.
Place in bowl and cover. Refrigerate for half an hour.
Press dough into round tart pan/dish.
Filling
1/3 almond paste (there are GLUTEN FREE brands)
1 tbsp coconut oil
1 tbsp Morselicious Mix
3 tbsp flax meal mixed with 9 tbsp water (let sit for 3 minutes)
2 tsp vanilla
2 large pears
juice of 1 lemon
1 tsp cinnamon
1 tbsp applesauce*
4 chopped dates mixed with ¼ cup boiling water (paste)
Preheat oven to 325 if using a glass dish.
Cream together almond paste, coconut oil, vanilla and applesauce.
Mix until smooth. Add Morselicious Mix and flax mixture. Beat or mix well.
Pour filling into tart shell.
Core pears, cut into ¼ inch slices. Place slices in a bowl, cover with lemon juice.
Arrange pears over filling.
Sprinkle with extra lemon juice and cinnamon.
Bake 35 minutes or until bubbly.
Top with sliced almonds and/or dried fruit (optional
Serve with a dollop of vanilla cashew cream
(for VANILLA cream: add 1-2 tsp. vanilla to my regular cashew cream recipe & for those who want extra sweetness, add a pinch of your sweetener of choice)
*I made my own applesauce by chopping one large apple and adding 1 tbsp. water,
blending on high for 30 seconds. VOILA!
