As promised in June National Fruit & Veggies Month, here is one of my favorite simple healthy veggie recipes:
A Morselicious Frittata:
Ingredients
- 11 egg whites
- 1 egg
- Splash of milk of your choice (I use Almond Milk-Unsweetened)
- 2 Zucchini (cubed or diced)
- 2 Yellow Squash (cubed or diced)
- Large Bunch of Organic Spinach (cut into shreds)
- 1 Cup of Mushrooms (sliced)
- 1/4 C Crumbled Goat Cheese
- Black Pepper
- Red Pepper
- Sauteed Garlic and Green Onions
- Fresh Basil
Directions
- Whisk eggs together with Milk and Peppers.
- Add Sauteed Garlic & Green Onions.
- Stir in veggies and Goat Cheese.
- Pour into a Lightly sprayed Glass Casserole Dish.
- Bake 25 minutes on 325.
- Top with Fresh Avocado and Basil,Rosemary or Parsley as Garnish.
I prefer to serve with a Simple Green Salad.
DELISH and very low fat and sodium. Almost NO sugar.
