June Veggie Recipe

As promised in June National Fruit & Veggies Month, here is one of my favorite simple healthy veggie recipes:

A Morselicious Frittata:

Ingredients

  • 11 egg whites
  • 1 egg
  • Splash of milk of your choice (I use Almond Milk-Unsweetened)
  • 2 Zucchini (cubed or diced)
  • 2 Yellow Squash (cubed or diced)
  • Large Bunch of Organic Spinach (cut into shreds)
  • 1 Cup of Mushrooms (sliced)
  • 1/4 C Crumbled Goat Cheese
  • Black Pepper
  • Red Pepper
  • Sauteed Garlic and Green Onions
  • Fresh Basil

Directions

  1. Whisk eggs together with Milk and Peppers.
  2. Add Sauteed Garlic & Green Onions.
  3. Stir in veggies and Goat Cheese.
  4. Pour into a Lightly sprayed Glass Casserole Dish.
  5. Bake 25 minutes on 325.
  6. Top with Fresh Avocado and Basil,Rosemary or Parsley as Garnish.

I prefer to serve with a Simple Green Salad.

DELISH and very low fat and sodium.  Almost NO sugar.
