Q.  Is there a difference in cashews raw vs roasted?

A: I apologize for taking so long to respond to your question. After much research, I have not been able to come up with a reasonable, fact-based understanding as to why raw cashews bother your mouth and roasted do not. Other than the idea tha roasted may leave a more pleasant mouth-feel as there are more oils released (perhaps the raw leaves a dry sensation in your mouth). What I can tell you is that they both have nearly the same nutritional value, with roasted being only slightly higher in fat (due to the release of oils in the heating process) and only slightly lower in protein. But since your consumption should not be more than an ounce at a time (as they are very calorically dense and high in fat), this is very insignificant.

Here I obtained nutrition facts from my FoodProcessor software:

Roasted, unsalted cashews (1 oz): Cal 160, Fat 13g, Sat Fat 2.5g, Sodium 0mg, Chol. 0mg, Carb 9g, Fiber 1g, Sugar 1g, Protein 4g

Raw cashews (1 oz): Cal 160, Fat 12g, Sat Fat 2g, Sodium 0mg, Chol. 0mg, Fiber 1g, Sugar 2g, Protein 5g
