Summer’s a blazing and I couldn’t resist experimenting with mo’ MORSELICIOUS icy treats. I couldn’t resist sharing my Chilly Chili-Lime Coconut Treat while singing along with Harry Nilsson’s “ lime in the coconut ” click on the link and sing along… I dare you NOT to smile! MORSELICIOUS Chilly Chili-Lime-Coconut Ice Pops Ingredients 1-½ cups coconut cream or coconut milk, frozen into mini ice cubes* Juice of 3-4 limes, frozen into mini ice cubes 2 tsp. chili powder (or to taste) 2 Tbsp. vanilla Pure stevia, to taste *For best consistency, freeze coconut cream (or a mixture of coconut cream and coconut milk) in mini ice cube trays. Mini cubes blend better than full-sized cubes if you don’t have a high-speed blender. Directions Combine all ingredients in a high speed blender or food processor; blend to a soft, creamy consistency. Fill containers or individual ice pop molds with mixture and freeze for approximately one hour. (Or enjoy immediately, as is, served in a bowl!) With my MORSELICIOUS pops, you can do just, that or freeze them in popsicle molds or ice cube trays with a toothpick and savor as a frozen pop, whatever suits your craving.
