When Maura Knowles’ father, Mac, underwent quadruple bypass surgery, his doctors ordered strict dietary changes. Placed on a low sodium, low sugar diet that calls for only healthy foods, Mac, who is also a diabetic, began begging for a treat that would fit his new lifestyle.
Knowles and her mother searched grocery stores, restaurants and recipe collections for products that could meet the need. Finding something ‘sweet’ to eat that contains no salt, sugar or chemicals, while still providing satisfaction for a sweet tooth proved to be impossible.
Since there was nothing on the market that could meet the need, Knowles, always the baker in the family, began experimenting with new recipes. She created a vegan ‘morsel’ that contains no artificial sweeteners, sugar, salt and is gluten free, and yet provided a tasty solution to Mac’s problem.
