What are you thankful for today?
I’m thankful for my health, my family,
my friends, my sense of humor, drive, 2 new stores:

In a desire to wean myself from even more sugar,
I’ve been experimenting with using LESS fruit in my smoothies,
NOT saying you have to, but wanted to share.
The results have been pretty tasty. There is still sugar in carrots.
In fact, 1 medium sized carrot has 3 g sugar.
A small apple has 13 g sugar.
1 cup blueberries has 15 g sugar
1 banana has 28 g sugar
1 cup chopped zucchini has 2 g sugar
1 cup sweet potato has 13 g sugar
1 tsp of sugar = 4 g sugar, fyi.

Granted, the sugar comes from food in its natural state, but
it still adds up and for diabetics, they have to watch ALL sugar.
Just more food for thought.
My LESS FRUITY GREEN SMOOTIE (because the Morselist LOVES her rhymes)

Through The MORSELIST BLOG, I’ve met some incredible people, including Health Care Professionals and one who has impressed me over the past few months is Lauren Kelley. I’m thankful for her new friendship and willingness to share her professional expertise. Morselites, meet Lauren: Lauren got her masters degree in Nutritional Science from Rutgers university. After the birth of her first child, she decided to get licensed as a Certified Nutritionist at American Health Science University in hopes that one day she could start nutrition consulting. Lauren has a huge passion for health, wellness and nutrition, and knew that one day she wanted to help people achieve their dietary goals. Lauren has three young children (6, 4 and 1 1/2) who keep her on her toes! She loves teaching her kids about what food does to their body and enjoys when they ask how much protein or fiber is in something they are eating. A busy mother of three, Lauren feels it’s very important to make exercise a priority and enjoys both running and Bar Method classes. While maintaining an extremely healthy household, she is a firm believer in “everything in moderation”.

here’s Mo’s FAVORITE Morselicious Salad Dressing Recipe:
And, for the record, Mo’s Mama LOVES this dressing, too!
And, she’s PICKY! (I mean that in the BEST sense of the word.
After all, she inspired me in the kitchen)
INGREDIENTS
1/4 Cup Extra Virgin Olive Oil
1/2 Cup Balsamic Vinegar
1 clove diced Garlic
Juice of 1/2 Fresh Lemon
Fresh Basil Leaves (choppedP
Black Pepper to taste (and, you know I add Cayenne, too)
I bottle the extra and save in my Fridge for the week.
I prefer Mixed Baby Greens or Wild Arugula and I believe that
NO salad is worthy w/o avocados & nuts or seeds!

To show my gratitude to my Morselite Readers,
here’s a recipe I was going to save for Meatless Monday.
One of this Morselist’s favorite foods of all time is EGGPLANT!
No matter how it’s prepared, it’s MORSELICIOUS!!!
Eggplants are good sources of fiber, potassium, manganese, vitamins B1 and B6, and folate.
Eggplants also contain phytonutrients and antioxidants that help feed your brain,
ward off cancer, and lower blood pressure.
35 calories per cup (STEAMED)
Last Monday, in honor of Meatless Monday, I created
this MORSELICIOUS MEATLESS MEAL, which I named
Eggplant Lettuce Cupalicious
Ingredients & Directions:
saute:
Garlic
Green Onion
Sesame Seeds
Nutiva Coconut Oil
ADD:
Diced Eggplant
Diced Sweet Potato
Juice of 1/2 Lemon
Cook over LOW heat until veggies are cooked to your texture preference.
In separate bowl, mix:
1 Tbsp Dijon Mustard
3 Tbsp Rice Vinegar (NO Sodium)
2 Tbsp. SO Delicious Unsweetened Coconut Milk
Pepper
Cayenne
Tumeric
Pour over veggies and mix well. Let the flavors blend for a few minutes.
In a small saute pan, toast
nutiva Hemp Seeds (EXCELLENT source of Vegan Protein)
Toasting the Hemp Seeds brings out an incredible nutty flavor.
Arrange Organic Romaine Lettuce Leaves on a plate,
spread Avocado on leaves
and ADD
the EGGPLANT Mixture and sprinkle Toasted Hemp Seeds on top.
Serve & enjoy!
Note: My NON-Vegetarian/Vegan boyfriend begged for seconds and leftovers for Tuesday Night!!!
