Gratitude – SURVIVAL kit check list

Happy MORSELICIOUS MONDAY!

Have you thought about what will you do/pack in case of an emergency?

 

Talk about GRATITUDE in its PUREST form.

For those of you not living in Southern California, here is an article about our

most recent and too close to home fires.

It was over 100 degrees here in Los Angeles and the stifled air smoldered with suffocating smoke. The Los Angeles Fire Department closed off part of our street to allow the countless fire trucks to station here, less than ¼ mile from us.

Doug rushed home from work and had to park about 3/4 miles away and walk up the hill with bags in tow.

Cars stopped. Neighbors evacuated, helicopters and

super scoopers soared overhead.

The news stations announced voluntary evacuations and encouraged residents to stand by, in case it increased to mandatory.

My heart and head sinking and swimming, as I wondered

what to do? What to pack?

Immediately, I called my elderly neighbors to make sure they were safe. Their daughter and her husband had already evacuated them. CHECK!

Our friends offered us places to stay.

More neighbors packed up, advising me to do the same.

My head kept reeling back to the note I had written on my TO DO LIST

for the past 2 weeks, that I had YET to check off:

It was too late now. So I had to figure out what was ABSOLUTELY necessary and what was SENTIMENTALLY irreplaceable.

My parents saw the fires on the news 6 hours away from here. Thankfully, Mom had her DISASTER LIST ready to share with me and walked me through what to pack, just in case.

For someone who’s always been extra prepared, this too close –for- comfort-near emergency was a giant WAKE-UP call!

Once the super scoopers did their job dropping  nearby ocean water over the flames, we learned the fires were becoming contained and we would NOT need to evacuate. We All breathed a smoky sigh of relief.

Timing is perfect: September is National Emergency Preparedness Month, sponsored  by the U.S. Department of Homeland Security’s Ready campaign to increase public awareness of emergency preparedness, urges four basic steps:

, be informed and get involved.”-National Safety

My list and kit are now up to date and I wanted to share with you, God forbid you’ll ever need it.

Please share with your loved ones and feel free to add anything (s) I left out.  Please post your additions so the rest of us can add to our list’s. NOTE: I don’t have pets or children, so I know there are PLENTY of items to add for people with either or both.

Q: Does wheatgrass contain gluten?
should those who avoid wheat and/or gluten also avoid wheatgrass??

A: When wheatgrass is properly harvested it does not contain any glutens. Because the grass is young, it has not yet formed the proteins that can trigger gluten sensitivity or severe allergy. However, especially for those with celiac disease, there is always the concern of contamination with wheat seeds. If there are sprouting seeds, some of the wheat-containing seeds can get into the wheatgrass. So it is important to know how and where to select a wheat grass that isn’t tainted with glutens.

I was able to contact Carol Shilson, Executive Director of the The University of Chicago Celiac Disease Center.  She put me in touch with their registered dietitian, and here’s what she had to say:

Wheat grass is questionable if it’s produced in a facility on shared equipment. If it’s tested and it’s less than the 20 ppm, then it should be fine.

It should not contain the protein portion of wheat, but I caution patients to always make sure it’s labeled GF. There is an Amazing Grass bar that a lot of patients eat, and claims to be GF, but it’s not approved by GFCO or been tested by anyone but their own company.

What are you thankful for today?

I am very thankful that my Dad, Mac, is safely home from

the hospital.

He had another scare shortly after our wonderful visit and

as always, it’s never easy having a loved one

in the hospital.

I am thankful for my family, friends, health and desire

to create-share and inspire fun & healthy tips-recipes

and  to learn from all of you!!

It’s Diabetes Awareness Month and the month of THANKSGIVING!

Here’s a MORSELICIOUS recipe I created a few nights ago

and to follow the Morselist’s Mission, I’ve named my new dish:

Mo’s Smashed Sweeters

2 pounds sweet potatoes

3 tablespoons hemp oil OR coconut oil

2 tablespoon rosemary

Black and red pepper to taste

Juice of 1 lemon

Bake sweet potatoes in foil or parchment paper until tender (about 20-25 minutes) 350.

Let cool for a few minutes then mash, leaving skins on.

Add oil, rosemary, pepper and lemon juice.

Spoon into bite sized “blossoms”

Onto lightly oiled baking sheet.

Add more rosemary & pepper, if needed.

Smash them with a fork.

Bake at 350 for 25-30 minutes for desired crispiness.

Q:  I’m really loving the coconut milk since you turned me onto it. It has more body than other nut/soy milks. the flavor is REALLY mild and I think it might even be better nutritionally than some of the other milks: Is this so? 
Note: I always buy unsweetened. 
A: Some of the recent types of coconut milks, specifically those designed as replacement for cow’s milk, can be both delicious and nutritious. Coconut milk contains a healthy dose of calcium as well as phosphorus, both good for building / maintaining strong bones. Additionally it contains the antioxidant Vitamin A. Coconut is also rich in heart-healthy B vitamins, as well as vitamin D and magnesium (also good for bone health). Now it is not to be confused with canned coconut milk, which are quite dense in thickness as well as calorically – yes providing many important vitamins and minerals, but still quite rich and thus should be consumed sparingly. Those contain about 500 calories (and more than 40g saturated fats) per cup.
On the market there are now a variety of brands that are designed as a milk alternative -relatively low in calories and quite pleasant in taste. One of the lowest calorie coconut milk – milk alternatives is Unsweetened So Delicious Coconut Milk: At just 50 calories per cup, it is low in sodium, has no cholesterol, has no sugars, yet provides adequate calcium and heart-healthy potassium. Other brands may be as caloric as 2% milk (120 cal) which isn’t so bad, perhaps these may have a thicker consistency and more full-filling mouthfeel. It is important to always read labels to see the nutritional values your product contains as they may vary in fats, sat fats, sugars, etc.
Do note that some of those commercial blends contain more than just health benefits from coconut, such as added sweeteners (ie sugar or a non-nutritive sweetener) and other less-than-healthy additives.  So just like any milk alternative (whether almond, soy or hemp…) you have to read the labels!

MY ADVICE: 
Continue to seek out unsweetened coconut milk (or alternate with other of unsweetened milk alternatives such as hemp milk and almond milk which also provide good taste and nutrition). Be sure to look for those with the least amount of sugars/sugar substitutes and other additives. (Or make your own to get the health benefits without the additives). And enjoy while staying within recommended dietary limits of saturated fats.
