How was your weekend? What did you do? I started the weekend with a magnificent hike with my friend, Nicola. The misty ocean fog was still making its way through the mountains and if I let my imagination wander, I could have sworn we were trekking through the grassy knolls of Ireland.  No, this isn’t a pix of our hike, just wanted to show you what my imagination looks like… :)

Then, a few of my cohorts from IIN and I got together for a study session/potluck/share fest. Michelle made a delicious quinoa salad. Edie made mixed greens & wild rice tempeh with a delectable vinaigrette. Suzi sprouted a buckwheat caramelized onion raw pizza.  OMG-YUM! I, of course made MORSELS! I’m blessed to be in school with such fascinating women. Doug and I attended my ‘lil’ sis, Meni’s orchestral concert.

She plays viola and was incredible! Sunday, we took the Metro downtown, an adventure in Los Angeles and a great mini-stair work-out!

We saw the Tony Award winning performance of Stephen Sondheim’s, FOLLIES at the Ahmanson Theatre.

This show is LEGENDARY and inspiring!  My good friend, Jenifer is in the show and she just found out she’s performing at the Tony Awards! Soo excited for her!

Lindsay’s Chocolate Peanut Butter MORSELICIOUS Brownies

1 Bag Morselicious Mix

1/2 cup unsweetened cocoa
1 tsp. cinnamon
1 cup mashed yam (cooked)
2 cups unsweetened almond milk
1/2 cup peanut butter
1 tsp. vanilla
5-10 drops Sweet Leaf Stevia
1.  Preheat the oven to 350.
2.  Put all the dry ingredients into a bowl.  If the cocoa is lumpy sift it.
3.  Combine the wet ingredients with an electric mixer.
4.  Add the dry ingredients
5.  Oil an 8×8 inch pan (I used coconut oil).
6.  Pour in the morseliciousness.
7.  Bake at 350 for 20-30 minutes depending on how gooey you like it.

Reece’s Fruit Delightfully Nutty Morsels (NOT cookies)Ingredients:
3/4 cup Morselicious Mix
1/4 cup dried apricots (or your favorite dried fruit), chopped
1 medium, ripe banana, mashed
1 1/2 tbsp coconut milk
3 teaspoons Sweet Leaf Stevia
1 tablespoon unsweetened preserves (I used Apricot that I happened to already have)
Pinch salt (Optional)
1/3 cup walnuts, choppedInstructions:
Pre-heat oven to 375 degrees. Mash together all ingredients thoroughly. If it seems a bit dry, feel free to add a bit more coconut milk. Drop by the spoonful onto a parchment or silpat-lined baking sheet. Bake for 10-12 minutes or until lightly golden. Experiment with different dried fruits!

Q: Why can’t I curb my chocolate cravings?
A: Women may experience chocolate cravings close to their menstrual cycle due to magnesium losses that may occur. Chocolate contains magnesium and it certainly isn’t a bad tasting way to get it. However their are plenty of other foods high in magnesium, including nuts and seeds, salmon, cucumber, bell peppers, kale. And these whole foods are much more concentrated in heart-healthy nutrients and less likely to pack on the pounds. Especially when you consider that one little oz of chocolate can be as much as 150 calories and 8-10g of fat. Not a lot of food for it’s caloric value.
But why is chocolate so addicting? Like sugars (and it contains them), it contains compounds that stimulate the pleasure centers of our brain* triggering us to want more. What’s more? A study in Spain concluded that the alkaloid compounds in chocolate may be the same as the addiction-inducing compounds in alcohol. While this is just one study, it certainly is worth more investigation. But let’s not forget, chocolate tastes good, has a wonderful mouth-feel and is sweet (chocolate is comprised of mainly cocoa and sugar). Sugars make us crave more sugars, so why wouldn’t we also crave chocolate.
So keep it minimal, in moderation – remember just a little can go a long way (in calories, flavor, and if you savor it – feeling good).

MORSELIST NOTE & RECIPE: I’ve become a HUGE fan of UNSWEETENED Cacao Nibs and I add them to my UNSWEETENED Hot Cocoa and now that summer’s here, Mo’s FROZEN COCOA! NO SUGAR…just a couple sweet leaf stevia drops …VOILA

Morselicious Frozen Cocoa

2 Tbsp unsweetened cocoa/cacao (use a premium grade-cheaper stuff tastes acidic)

1-2 drops vanilla or coconut liquid stevia

1/3 cup milk of choice (I prefer unsweetened coconut or almond)

ice cubes

Blend well

OPTIONAL:  Top with a dollop of cashew cream & a tbsp of  unsweetened   cacao nibs

Work-it-out-Wednesday Kiki’s Treatment Fund

One of my dear friends friend, needs help. The following is from Kiki’s father, Ami.

Help support Kikis Treatment fund:

Our 6 year-old daughter Kiki was diagnosed with a mass on her brain in early January, 2011.

She had surgery to remove whatever amount was possible without effecting her brain.

A biopsy revealed that it was not benign, therefore the standard treatment of chemo and radiation was offered.
Through our research, we found out that this type of treatment was risky and could leave permanent damage.

Also, there was absolutely no guarantee that chemo would cure her and may put her life at further risk.
My wife and I made a decision to try alternative treatment for Kiki.

Doctors did not believe that other treatments would work, but her doctor was surprised a few months later when an MRI revealed that the mass was almost completely gone!

We were very happy to see our daughter back to being completely normal.
About 6 months later she started showing new symptoms that made us suspect and worried.

A new MRI confirmed that something came back and was creating pressure.

We started our mission again to get our daughter back to health.

We knocked on many doors, did research and prayed for hours for wisdom.
We found a doctor who practices alternative medicine in Sacramento that has successfully treated many patients with similar conditions as our daughter.

Encouraged by their testimonials, we immediately packed and rushed to Sacramento to start the treatment. The results have been encouraging but it has been a slow process.

We have now been staying at a hotel for over 4 months and our older 9 year-old daughter is going to a school in Sacramento.
We have discovered a few new and effective treatments options that will help Kiki, and with the proceeds of this fundraiser we are hopping to be able to incorperate it into what we are already doing.
Our health insurance has totally denied paying for her treatment.

We have exhausted our financial ability to continue with the treatment and now against all that we have ever imagined we are asking for your contribution and help.
