Mo’s Sweet Tater-Z’chinni Cakes
3 Sweet potato’s cooked and mashed
2 shredded zucchini, raw
3-4 sliced Celery stalks
4 diced green onions
¼ cup Morselicious Mix
1/3 cup Hemp seeds
1/3 cup Water
1 tbsp Rosemary
Black pepper (to taste)
Cayenne (optional)
Directions:
Mix ingredients together and spoon onto lightly oiled pan
I use coconut oil
Cook until lightly crispy, flip over
Garnish with parsley and cilantro
Top with avocado slices or cashew cream
ENJOY!!
Serves 4

This looks VERY tasty! I’m looking forward to making it. This weekend, using more veggies from my Farm Fresh to You basket, I made a carrot, leek and onion (crustless) pot pie topped with mashed potaties and baked until golden! Very good.
With all of the rain in LA, I also started painting again – it’s been months. Very relaxing with some classical music on in the background.
This makes my heart & tummy smile!
